Veggie Scrambled Eggs

 

One whole egg, one egg white
1/2 cup Chopped red pepper
1 cup raw Chopped mushrooms
1ounce Swiss cheese
Cooking spray

Spray a non-stick pan with a small amount of cooking spray.  Sautee red pepper and mushroom. When vegetables are soft, add eggs and scramble.  Cook until done, then top with Swiss cheese.
